chopped 4 to 5 medium tomatoes (2 cups)
1 big onion, diced, and 2 large celery stalks, chopped (1/4 cup).

- Combine all the ingredients in a 2-quart pot, then cook for 15 minutes with the lid on.
- Cool a little before using a food processor to purée. To stop the hot liquid from sputtering out of the bowl, cover the lid with a moist towel.
- Add the purée back to the pan and simmer for a further 15 minutes, or until it thickens, taking careful not to burn it.
- Spread the mixture onto a baking sheet that has been lined with plastic wrap, then tilt it to spread it evenly.
- Allow the mixture to dry for 6 to 8 hours in a 120°F oven so that it can be easily peeled away from the plastic wrap.
- Turn over on another plastic wrap sheet, take the bottom plastic wrap off, and dry for a further 6 hours.
- Take the cloth off and let the food to cool to room temperature.
- Wrap securely in plastic or foil. Roll up and keep for up to a year in an airtight container out of the path of heat and light. Some like to store and roll the roll after lightly dusting it with cornstarch to prevent sticking. To use, slice off pieces of the roll to make a wholesome snack.
