RECIPE FOR CHICKEN ALLA VODKA WITH SPAGHETTI

This specific dish, Chicken Alla Vodka with Spaghetti, was inspired by a dinner out with friends on a ladies’ weekend in January of 2010. There has been no sign of this specific pasta dish since then.

Toss properly cooked pasta in a rich and creamy sauce that is flavorful, tomato-y, and light on the cheese, then serve it with a wonderfully marinated chicken breast that has been char-grilled and seasoned to perfection.

The want to jump in and devour this delectable meal as quickly as possible will be strong, but you will also want to be refined and delicate in your approach to this upscale dinner.

Regardless of how you want to consume it, be sure to cook enough so that you may have some leftovers as well.

DIRECTIONS

Toss the pasta in a large saucepan of boiling salted water and cook until al dente. Cook until the pasta is just al dente, then drain immediately, saving 1+ cup of the pasta water.

Preheat your grill to between 375°F and 400°F (depending on your model).
Chicken breasts should be lightly seasoned with the herbal seasoning before being seared over direct fire until sear marks appear.

Cook the chicken until an instant-read thermometer registers 165°F by moving it to an indirect heat source. While you’re preparing the remainder of the dinner, use the Napoleon Wireless Digital Thermometer to keep track of the temperature of your chicken.

Meanwhile, melt 3 tablespoons of butter in a Napoleon Stainless Steel Wok set over a side burner on the stovetop. Add the onion and cook, stirring often, until the onions are slightly transparent. Cook for another minute or two once you’ve added the garlic.

Allow the tomato paste to caramelize a bit as you stir it into the onion and garlic. The color of the tomato paste will change from a brilliant red to a darker brick red over time. This will take around 5 minutes.

Pour in the vodka and cook until the alcohol has been completely burnt out. When you are pleased with the color, remove from the heat. In a separate bowl, whisk together the cream, chili flakes, salt, and pepper to taste. Reduced the heat to a low setting.

Toss the cooked pasta into the sauce, along with the remaining 2 tablespoons butter and half of the pasta boiling liquid, and mix well. Stir frequently, adding the pasta liquid as required, until a rich and glossy sauce coats the noodles and the pan is empty.

Mix in the majority of the cheese, keeping a little amount for garnish.

Remove the cooked chicken from the grill and allow it to rest for at least 5 minutes before serving the remainder of the chicken.

Serve the pasta topped with the chicken, the remaining cheese, and a sprinkle of fresh basil on top of the dish.

The BBQ Chicken Alla Vodka with Spaghetti dish will have you craving it before you have even finished eating it the first time. The sauce, as well as the herb-marinated grilled chicken, is delectable.
